Beluga Caviar

 

The Beluga (huso huso) is the largest of all sturgeons (up to 6 meters/20 feet in length) and is the only carnivore. The Beluga has been known to weigh 600 kg (1,323 Lbs) or more, its eggs size is the largest among Caviar variety, and the diameter of an egg ranges from 2.8mm to 3.0mm or larger. The Beluga Caviar is evenly colored and has a blackish-grey or silver tint and is odorless. Beluga Caviar is the most expensive type of Caviar, because it can only be obtained by a full grown Beluga sturgeon, which takes several years to become an adult fish and produce large sized eggs.

 

· From weather to politics to conservation policy, many factors affect Caviar availability. In 2004, the U.S. Fish and Wildlife Service announced the listing of Beluga sturgeon as threatened under the Endangered Species Act. The traditional Beluga Caviar is currently illegal in the U.S. through legitimate purveyors.
